Interim

             Interim is one of the most renowned restaurants in Memphis with some of the best chefs from all over the states.  The kitchen is highly visible to the customers, or in this case, audience, to enhance the relationship between the chef and the patrons. I was hired as their garde manager, one who handles the salads and appetizers.  Some entrees on my stations included Arugula salad, Caesar salad, duck fritters, and soft shell crab.  All of the dressings for the salads were prepared in house before service.   Communication was key to ensure quality food at correct temperatures.
